I Wish You Could Smell This...

This is yummy Pumpkin Crunch and when it's baking, it fills your house with the wonderful smells of the holidays.  I really don't like pumpkin - especially pumpkin pie - but I love this.  Plus, it's very easy to make...since I am definitely not a gourmet cook!  Make it a day ahead for the best flavor.

Here's the recipe:

1 pkg. yellow cake mix
1 (16 oz.) can solid pack pumpkin
1 (12 oz.) can evaporated milk
3 eggs
1-1/2 cups of sugar
4 tsp. pumpkin pie spice
1/2 tsp. salt
1 cup chopped pecans
1 cup margarine, melted
Cool Whip (I like mine better without it)

Preheat oven to 350 degrees.  Grease the bottom of a 9x13 inch dish or pan.  Combine the pumpkin, milk, eggs, sugar, spice and salt in a large bowl.  Pour into 9x13 dish.  Cover evenly with the dry cake mix, making it as flat as possible by pressing gently with your fingers.  Top with the pecans.  Again, try to press them in a little.  They tend to burn if they're sticking up too much.  Drizzle melted margarine over the top, covering the top.  Bake for 50 to 55 minutes or until golden brown.  Cool and refrigerate.  Top with Cool Whip if desired and serve.
